Air-dried, extremely lean beef is an exquisite delicacy originally from the mountainous Valtellina area of northern Lombardy. Our bresaola is from grass-fed Uruguayan beef cattle and is dried according to traditional standards. This delicious meat is usually served like carpaccio, with just a squeeze of lemon, dribbles of olive oil and salt and pepper. Bresaola is only shipped thinly sliced, is vacuum-packed and protected with cold packs, and may need to be shipped 2nd day air, depending on distance.
