Prosciutto di Carpegna D.O.P. is the result of ancient curing traditions that date back to the 1400s. It is produced from a specific breed called Pesante Padano a considerably larger breed of pig that comes from Lombardy, Emilia-Romagna and Marche. Carpegna is made in a single production plant where ten masters butchers are the sole keepers of its secret and hand them down to the next generation.
