The Panettone Perbellini is a classic for Christmas. This time and laboour intensive cake is created using the finest candied fruits and sultanas. The dough is leavened for 24 hours before baking and then allowed resting time before being tastefully wrapped and traditionally hand tied with a string and a dried grape vine as a handle. Serve in narrow wedges with espresso, tea or even prosecco.
