
Capirete Sherry Vinegar is aged 20 years in southern Spain. The producer Jose Paez Lobato of Jerez, Spain, uses the solera method in which the vinegar is aged in a succession of wooden barrels that once held sherry wine. The result is a thick, distinctive flavor that is perfect for zesty vinaigrette, sauces, and to drizzle over Spanish cheeses and roasts.
Chardonnay wine vinegar from Spain is produced in limited quantities by the Forvm cellars in Tarragona in Catalonia. Following the traditional method, this vinegar is slowly aged in oak and chestnut casks. It is rare to see this kind of attention given to simple wine vinegars and it shows. Cabernet wine vinegar from the Catalonia region of Spain is produced in limited quantities by the Forvm Cellars company in the Catalonia region. Following traditional methods, the vinegar matures slowly, reveals the taste and smell of the oak and chestnut casks used to age it. It is rare to see this kind of attention given to simple wine vinegars and it shows. This Cabernet vinegar has a gentle, berry-laden flavor with a subtle finish. For a sensational vinaigrette, pair this wine vinegar with one of our fine olive oils, such as Frantoia Extra Virgin Olive Oil, or drizzle a little over fresh fruit or tomatoes.
