Capirete Sherry Vinegar is aged 20 years in southern Spain. The producer Jose Paez Lobato of Jerez, Spain, uses the solera method in which the vinegar is aged in a succession of wooden barrels that once held sherry wine. Vincotto originale with sweet, complex flavors distinguish this “vinegar,” the cooked 'must' of the Negroamaro and Malvasia grapes. This very thick, aged syrup is sometimes called a 'vinegar' but has less bite and a sweet finish; no preservatives, added flavors or sugars are used to make it. Sweet, rich, syrupy “vinegar” infused with raspberries is produced by the Calogiuri family, masters of flavored vinegars. This condiment made of cooked must from Negroamaro and Malvasian grapes is a thick, richly sweet syrup flavored with fresh raspberries. A clear, sweet and slightly tannic white vinegar from Liguria comes from the heart of Liguria's "Riviera of Flowers", and is hand-crafted. This special dressing, made from local white wine vinegar blended with the must of Trebbiano grapes, is a good example of that care. Its fresh, slightly sweet, and well-balanced flavor is wonderful over delicate greens, or in dressings or sauces.
Cabernet wine vinegar from the Catalonia region of Spain is produced in limited quantities by the Forvm Cellars company in the Catalonia region. Following traditional methods, the vinegar matures slowly, reveals the taste and smell of the oak and chestnut casks used to age it. It is rare to see this kind of attention given to simple wine vinegars and it shows. This Cabernet vinegar has a gentle, berry-laden flavor with a subtle finish.
